Raisin Griddle Cookies

From the Kitchen of the Price Family



Ingredients:
1 cup raisins
1/2 cup water
1/2 cup sugar
1/2 cup margarine
1 egg
1 teaspoon vanilla
2 cups flour
1/2 teaspoon baking soda

Directions:
1. Cook raisins in water for 5 minutes.
2. Cream sugar and margarine.
3. Add egg and beat well.
4. Stir in vanilla, flour, soda, and the raisins & water.
5. Roll out on a lightly floured surface. Cut out shapes using 5 cm (2 in) cookie cutters. Note: Dough will be soft.
6. Cook on griddle 350° for about 2 minutes or until light brown.
7. Turn to cook the other side with a spatula. When both sides of cookie are done, remove from griddle.
Makes about 3 dozen 5 cm (2 in) cookies. Takes about 30 minutes to complete.
